We have been playing around with the thought of starting a youtube channel for a while. A video is such a great media to supplement our photos. It makes us able to connect, show details, and set a mood in a different way. We are very fascinated by the amazing videos Green Kitchen Stories has created. Our first attempt is this Rosehip Breakfast Bowl. It’s basically a smoothie – except we have added less liquid to make the consistency thicker. In this way you can use it as a fruity ‘yoghurt’ and eat it topped with crunchy granola and fresh berries. It’s one of my favourite breakfast eats and it’s super duper easy to make. We have used a combination of strawberries and rosehip powder, but you may substitute it with any kind of frozen berries you would like.

Rosehip Breakfast Bowl
(Makes 1 serving)
1 ripe banana
100 g thawed strawberries (or another kind)
1 tbsp rosehip powder
1 tsp vanilla powder
1,5 tbsp psyllium HUSK
1/2 cup / 125 ml plant milk (e.g. almond or rice milk)
Fresh berries and granola (like this one) for serving.
Place all the ingredients in a blender and blend until smooth. Wait a few minutes until the psyllium husk fibres starts to absord the liquid and the consitency will be like a yoghurt. Enjoy with granola and fresh berries.
Tip: Prepare the breakfast bowl in the evening and bring as breakfast to go.
