So Camilla and I usually don’t celebrate Valentine’s Day. It’s not that we think of Valentine’s Day as something particular ‘commercial’ or ‘superficial’; any event being able to actually bring two human beings together and making them remember and cherish what they have together is an event worth acknowledging. We just prefer to celebrate our love with spontaneous dinner dates or carefully chosen occasions scattered randomly across the year in our own pace and whenever we see it fit.
But regardless of how we celebrate love, we’ve noticed that chocolate and sweet treats usually play a rather central part of the celebration. That’s why we came up with this vegan chocolate mousse for Valentine’s Day; it’s made from ripe avocados and bananas, cocoa powder, and sweet maple syrup. With the avocados being the main ingredient, the mousse is incredibly rich – and on top of that it’s both delicious and healthy; a declaration of love for you body!
Vegan Chocolate Mousse
(Makes 2 servings)
2 avocados
1 very ripe banana
4 tbsp cocoa powder
1 tsp vanilla powder
4 tbsp maple syrup
Juice of ½ lemon
Topping
Raspberries
Pomegranate seeds
Hemp seeds
Place all the ingredients in a blender or food processor and blend until smooth.
Refrigerate for 1 hour before serving the chocolate mousse topped with berries, pomegranate seeds, and hemp seeds.
